This is my absolute favorite way to prepare tofu. The texture very similar to chicken, although a bit softer. The crust is very crunchy and reminiscent of fried chicken. This recipe has many steps and will require a couple hours prep time. Serves 3-4.

Ingredients:
For the tofu
1 lb extra firm tofu
2 eggs
3 Tbs olive oil
2 cups panko bread crumbs
1/2 cup all purpose flour
1 tsp seasoning salt
1.5 tsp smoked paprika
1/2 tsp black pepper
1 tsp Goya Adobo
1/4 tsp garlic powder
For the mashed potatoes
2 lbs red potatoes
1/2 cup milk (nut milk if vegan)
2 Tbsp margarine (I prefer Smart Balance)
1/4 tsp garlic powder (optional)
1 tsp Kosher salt
1/2 tsp black pepper
1/2 tsp Goya Adobo
1/4 cup parmesan cheese (omit if vegan)
For Asparagus
1 lb asparagus
1 clove garlic minced
1/4-1/2 tsp seasoning salt
1/4 tsp black pepper
1 Tbsp olive oil
1/4 cup water
Directions:
Slice tofu into 1/2 inch slices, lengthwise. Place each piece on a large strainer or colander lined with paper towel. Place more paper towel directly on the tofu and press down gently. Allow to drain for at least 2 hours or in the fridge overnight.
Preheat large dry nonstick frying pan on medium heat. Also preheat oven to 375 degrees Fahrenheit.
Beat eggs until uniform and set aside. combine flour with seasoning and mix well. Spread bread crumbs on a plate or shallow bowl.
Coat tofu with seasoned flour, coat with egg, then panko.
I recommend lining a cookie sheet or large plate with wax paper to hold breaded tofu until frying time.
Add olive oil to hot pan and allow to heat for 2 minutes. Add a few pieces of tofu to the pan and do not crowd the pan. Fry until golden brown on both sides, about 3 minutes per side
Place tofu on baking sheet and place in oven for 10 minutes. Place on paper towel to drain excess oil.
To make the potatoes
Place clean and cubed potatoes, skin on, in a large pot of boiling water. boil until fork tender, about 15 minutes. Drain.
Place potatoes back into the pot and add butter and mash with fork or masher. Add remaining ingredients and stir well. If you prefer a smoother consistency add a couple tbsp more milk.
To make the asparagus
Heat large pan on medium heat.
Clean and trim about an inch off of the bottom (stem) of asparagus and discard.
Add the asparagus and oil to pan and heat for 2 minutes while agitating the pan. Add seasoning and garlic. Cook for 1 minute, agitate pan.
Add water and cook for 3 minutes. Asparagus should still have bright green color and should be penetrable with fork or knife.
Serve warm, enjoy!
